what’s going on guys as you probably already know we’ve been doing a lot of do-it-yourself Lenny and Larry inspired protein cookies on the channel and one of the most requested cookie recipes I’ve been getting is for the snickerdoodle cookie so that’s exactly what we’re doing today making a high-protein snickerdoodle cookie it’s totally macro friendly totally delicious and super quick to make so let’s hop right into it and make this cookie alright guys so the first thing you’ll want to do is take out your food scale and add a small to medium-sized bowl tour if you don’t have a food scale there’s a link to pick one up in the video description below we’re gonna add a tablespoon of coconut flour to our bowl along with a scoop of vanilla whey protein powder I used ice ofyours protein powder for my cookies 1/2 a teaspoon of cinnamon 1/2 a teaspoon of vanilla extract and 1/2 a teaspoon to a teaspoon of a liquid sweetener of your choice if you use liquid stevia you’ll probably want to use a teaspoon you’ll also want to add a tablespoon and a half of unsweetened vanilla almond milk and just a pinch of salt now the fun begins guys take a spatula and just start working all those ingredients around until a nice crumbly consistency something like this starts to form when you get this consistency that’s when you’re gonna want to start using your hands to form your ball dough I like to spray my hands the little baking spray before I start working the dough just because it helps the dough not stick as much to my fingers when I’m working with it and you should easily be able to make a ball of dough just like this once you have this ball dough that’s when you’re gonna want to start pressing it out so spray your work surface area with a little baking spray and use all of your best cookie shaping techniques to form just the absolute perfect sized cookie it should be maybe like a quarter inch thick it’s like the perfect cookie thickness you’re looking for then you can spray your cookie with just a little baking spray and add some cinnamon sugar to the top of the cookie at this point you’ll want to transfer the cookie to a plate and either refrigerate it for at least an hour so it has time to set so you can eat it as a no baked cookie or what I like to do is just microwave it real quick for 10 seconds and then I like to let it sit for about one to two minutes so it hardens up just a little bit and then you’ll have this wonderfully delicious soft and chewy cookie consistency guys I mean check this cookie out how good is that alright guys so just a couple of quick pro tips on making the cookie everybody is protein is gonna be a little different so if you’re having trouble developing a dough out of the ingredients say for instance it’s more of a batter instead of a dough add a teaspoon of the time of an equal part coconut flour and protein powder until you get your dough developed now if the opposite is happening if it’s too dry and it’s actually not forming into a dough it’s just crumbly dryness then you want to add a teaspoon or two teaspoons at a time of almond milk until you actually get the dough to form and that’s probably the biggest tip I can give you guys just because getting your dough to develop is like the most important part to making a cookie so just keep that in mind because like I said everybody’s protein powder is different and that might lead you to having some pitfalls and trouble actually and my second pro tip is just always err on the side of less microwaving is better with these cookies just because if you over microwave it it will end up dry and no good in a brick and you don’t want that so just follow my advice ten seconds should be perfect that’s for like a 1200 watt microwave and I have a 700 watt microwave it’s like the least powerful microwave known to man the most I will put my cookie in the microwave fourth is 15 seconds so definitely just less microwaving is better and as far as the macros on the cookie it’s only 155 calories 2 grams of fat 8 grams of carbs 2 which is fiber and 26 grams of protein so I hope you enjoyed today’s recipe I hope you enjoyed the cookie you try it out let me know how it goes for you in the comments below the full recipe with the metric measurements it’s in the video description along with all the products I used to make the cookie thanks for watching guys I’ll see in the next video
