what’s happening guys I hope you have a great day wherever you happen to be today I’m gonna show you how to make a lighter version of blueberry muffins this recipe was actually a recipe I did for I secured the protein company on their Facebook page last month but I figured a lot of you guys probably haven’t seen that video so I might as well share it with you on the YouTube show so let’s hop right into this recipe and get cooking alright guys so in a large bowl we’re gonna add 1/2 cups of white whole wheat flour 2 scoops of ice appears vanilla whey protein powder 1/4 cup of stevia 2 teaspoons of baking powder and 1/4 teaspoon of salt now we’re all set to take our whisk and combine all those ingredients in a separate Bowl we’re gonna add 1 cup of unsweetened applesauce 2 teaspoons of vanilla extract and 1 large egg at this point we can take our whisk back out mix all those ingredients together and then once they’re combined we can pour those wet ingredients into the dry ingredients give everything a mix of the spatula and then once we get a thick batter like this to form the bowl we’re gonna add our blueberries we’re gonna be adding three-quarters of a cup of either frozen or fresh blueberries and then we’re just gonna mix the blueberries into our batter once they’re mixed in well we’re gonna get out a muffin tray and add eight liners to our muffin tray and coat each liner with a little baking spray just so that our muffins don’t stick to liners themselves when we bake our muffins now we’re going to evenly distribute our batter between the eighth muffin slots add some extra blueberries and we’re also gonna be adding some actress TV here in a second to the top of them as well then we can bake them at 375 degrees for about 20 minutes of them cool completely in the tray and of course as always enjoy guys all right so that’s today’s recipe guys if you want the full recipe with the step-by-step instructions or the metric measurements or the macorís the recipe or just one pick up any of the stuff that I used to make today’s recipe like the protein powder all that is in the video description below guys if you liked today’s recipe don’t hesitate to hit the thumbs up button hit the like button because it really just helps the video out a lot guys and I really really appreciate it so thanks for hanging out with me a little bit today making some muffins I will see you guys in the next video [Music]

Things I Used In Today’s Muffin Recipe:

BLUEBERRY MUFFIN RECIPE:
White Whole Wheat Flour: 1 1/2 Cups
Zero Carb Isopure Creamy Vanilla Protein Powder: 2 Scoops (60g)
Stevia Sugar Blend: 1/4 Cup + 1 Tsp for Topping (50g)
Salt: 1/2 Tsp
Baking Powder: 2 Tsps
Unsweetened Applesauce: 1 Cup (244g)
Vanilla Extract: 2 Tsps
Egg: 1 Large
Blueberries: 1 Cup (140g)
MUFFIN INSTRUCTIONS:
-Add all dry ingredients (except for 1 tsp of stevia and the blueberries) to a large bowl and mix until combined.
-Add all wet ingredients to a medium bowl and mix until combined.
-Pour wet ingredients into the dry and mix with a spatula until a batter forms (DO NOT OVER MIX).
-Once the batter forms fold in 2/3 cup of blueberries.
-Now line a regular sized muffin tray with 8 paper liners, coat them with baking spray, and add the batter equally to each tin.
-Top the tins with a few blueberries and a dash of sugar.
-Bake at 375 degrees / 190 Celsius for around 20 minutes.
-Let cool on the baking tray.
-Store in an air-tight container and refrigerate for several days. Or freeze the muffins for up to a few months. Makes 8 Servings.
