hey dr. Burke here in this short video we’re going to show you how to make pancakes totally legal no flour no sugar it’s made with almond flour and you can put Kerrygold butter on it which is the grass-fed butter hormone free and Yukon syrup you can get this from the health of store as a glycemic index of 1 so it’s way better than a Gotha sweetener so let’s show you how to make this ok so it’s really simple it’s 1 tablespoon of xylitol that’s the sweetener zero glycemic index almond flour 1 cup of almond flour buttermilk 1/2 cup no hormones we got baking powder baking soda 1 egg light olive oil sea salt so let’s just go ahead and mix this together ok so the first we’re going to do is going to take 1 cup of almond flour okay take the dry material and then we’ll take 1 tbsp of xylitol okay and we’ll put that in there and then we’re going to take 1/4 teaspoon of the baking powder 1/4 teaspoon of the baking soda okay and then we’re going to take 1/8 of a teaspoon of sea salt so it’s a little half of this little thing right here okay and then we’re going to take the egg and whisk it a little bit first I’m going to put the egg right here okay so one tablespoon of a light olive oil all right so we’re just going to mix it all up just very very simple and then we’re going to add the buttermilk 1/2 a cup get the no hormone buttermilk the buttermilk is the secret ingredient FYI okay it makes it really good and then we’re going to wait let it set for 2 minutes so it’s going to rise a little bit okay so it’s been 2 minutes and now we’re gonna do is I’m going to actually pour this into something that I can pour them on the griddle all right good now I’ve already preheated the griddle to 350 degrees you can use it in a frying pan you can heat it up on whatever but even waffles if you want but let’s go ahead and pour this on the griddle so we’re just going to pour if you make them a little smaller it’s easier to flip them and you’re going to wait till they Brown and then you’ll flip them on the edges it’s a baby one okay so I have the pancakes done and I didn’t put any type of oil on here because this is a nonstick surface and the temperature was at 350 degrees okay we have ollie my daughter is going to sample the pancakes so go ahead and see if you like it is it good mm-hmm good all right it’s a success

1 Cup / 4 oz / 113 g – almond flour
1 TBS / 12 g – xylitol sweetener
1/2 TSP – baking powder
1/4 TSP – baking soda
1/8 TSP – sea salt, finely ground
1/2 Cup / 4 oz / 113 g – buttermilk
1 – egg, well beaten
1 TBS / 14 g – light olive oil
Softened butter & Yacon syrup and/or fresh fruit, for serving
Preheat a griddle to 350°F. Combine dry ingredients in a large bowl. In a small bowl, whisk egg, then add olive oil, and beat well. Add buttermilk to the egg mixture and stir to combine. Add this mixture to the dry ingredients and whisk until smooth. Allow batter to sit for at least two minutes to rise. Pour four medium or eight small pancakes onto the griddle (silver dollar-size are MUCH easier to flip, especially if you are a novice). Cook until edges are done and bottoms are golden. Turn pancakes and cook about one minute longer or until done. Serve hot, topped with butter and yacon syrup and/or fruit and enjoy!
Makes 4 regular or 8 silver dollar pancakes.
