Fatty acids are simply the small molecules that make up the fat we find in what we eat as well as the fat stored in our bodies. In your body fatty acids perform three major functions: they provide energy, are used as the building blocks of cell membranes and are used in the body as materials that are converted to something else in order to perform a role in the body, such as hormones. In your mitochondria, fatty acids are oxidized to acetyl CoA. This acetyl CoA is then converted into ATP, CO2, and H2O. ATP is used as fuel in your body. Fatty acids are made up of a chain of carbon atoms with hydrogen atom pairs and one acid group on the end. There are 4 types of fatty acids, distinguishable due to their length and hydrogen saturation:
1. Saturated fats – typically solid at room temperature due to being saturated with hydrogen atoms.
2. Unsaturated fats – liquid at room temperature. Unsaturated fats have one or more pairs of hydrogen atoms taken away
-Monounsaturated – one pair of hydrogen atoms gone
-Polyunsaturated (PUFAs)- more than one pair of hydrogen atoms gone
Saturated fats and monounsaturated fats are more easily used in the body. Trans Fats – What is Hydrogenation?
One problem with fats today is that we go in and change fats to increase their shelf life and make them able to be used for more time in a deep fryer. By adding hydrogen to vegetable oil, we create manufactured trans-fat, also known as partially hydrogenated oil. These are the fats that you find when you go out to fast food, and they are used to save money, disregarding the health consequences. Deep fried foods, margarine and many snacks like potato chips contain trans-fats. 40% of the products on supermarket shelves contain these oils.
Why is Trans-Fat Bad? Trans-fat has been found to raise your LDL, or bad cholesterol, which can lead to hardening of the arteries. It also lowers your HDL, or good cholesterol, which helps to shuttle excess cholesterol back to your liver, the opposite of hardening your arteries. Due to the chemical structure, these fats are not easy for your body to metabolize. Since they are not easy to use, they sit in your fat stores in your body, making it harder for your body to efficiently break down other fats and proteins.
Studies have also found that consuming trans-fats increases inflammation in the body. Chronic inflammation is tied to many health problems, including cardiovascular disease, cancers and pain. When your gut is inflamed, you are not as able to absorb nutrients from your food. This can lead to not getting the nutrients that you need. Trans-fats have been found to increase the levels of lipoprotein(a) and triglycerides in the blood and increases the risk of diabetes. High triglycerides are linked to heart health problems, high blood pressure and diabetes.
*Steer clear of fast food and processed foods. This is the only way to avoid this dangerous kind of fat.
