hey what’s happening guys I am back with another quick easy low-carb keto recipe for you and today we are doing something really refreshing really flavorful and a little tangy and that is a 1-minute keto Lemon Poppyseed mug cake no it is a minute because we are going to be making this in the microwave but if you want to make this in the oven you totally can it’s gonna take about 10 to 15 minutes in your oven at 350 degrees Fahrenheit so having said that if you find yourself in the comments of this video and somebody says can you make this in the oven direct them to watch the intro of this video because there are instructions on how to do that in the intro and they clearly skip some of the video that said let’s get right into the recipe make this low-carb Lemon Poppyseed mug cake alright the first thing one do is get out some butter and add a half a tablespoon or 7 grams of it to a large measuring cup then when we’ve done that we’re gonna pop that in the microwave for just about 30 seconds or until the butter is melted once it is we’re gonna add a large egg to the cup along with one and a half tablespoons or 21 grams of unsweetened almond milk then we’re gonna add all the lemon deliciousness to our keto mug cake we’re and do that by adding the juice from half of a medium-sized lemon and this is equal to about a tablespoon or 15 grams of lemon juice so once we’ve added that we’re also going to add a quarter teaspoon of vanilla extract and then we can get out our whisk and whisk if I all those ingredients together alright that’s looking pretty good now let’s start adding the dry ingredients the first of which is going to be almond flour and we’re gonna add just less than a half a cup 450 grams of it for this Lemon Poppyseed mug cake then we’re going to sweeten our cake up in a totally low carb keto friendly way by using two tablespoons or 18 grams of confectioner swerve so after we’ve got that added to the cup we’ll also want to add 1/2 a teaspoon of baking powder and then lastly a quarter teaspoon of poppy seeds now at this point we’re all set to get out our spatula and mix those ingredients together until a thick batter like this forms then when it does we can coat an 8 ounce bug with some baking spray and add all of the batter to it so once we’ve got that taken care of we’re gonna cook our Lemon Poppyseed keto mug cake for 30 seconds check on it and then cook it for another 30 to 45 seconds then when our mug cake is perfectly cooked we’re gonna let it cool down and while it’s cooling we’re gonna start making a quick and easy glaze for the top of it so to do that we’re going to add another 1/2 tablespoon or 7 grams of butter to a small dish and then again just like we did before we’re going to melt it down real quick now once you’ve got the butter melted we’re gonna add about 2 teaspoons or seven grams of confectioner’s worth to it along with about a half a teaspoon of unsweetened vanilla almond milk then we’re just going to mix those up real quick and once we’ve got a nice looking glaze going on we can pour that over the top of our keto mud cake and there you have it that is how to make a Quito Lemon Poppyseed mug cake as always for more info on today’s a low-carb mug cake recipe check out the video description below and I hope you enjoy it
