so as you guys know I love a good low-carb keto cookie recipe I’ve probably done more keto cookie recipes than any other kind of keto recipe and honestly I want to get today’s keto cookie recipe these shortbread cookies out before Christmas because shortbread cookies make great Christmas cookies but the Christmas rush the busyness of the holiday season it just was overwhelming and I didn’t have time to edit all this together and get it out for you guys before the holidays so I apologize for that but luckily shortbread cookies are delicious any time of the year and there doesn’t have to be a season to enjoy shortbread cookies so with that being said let’s get on this one let’s make these keto shortbread cookies alright so the first thing we want to do is preheat our oven to 300 degrees next we’ll want to take out a large bowl and just crack it add one large egg to it to that bowl we’re also gonna add 1/2 a cup or about 112 grams of melted butter as well as a teaspoon or capful of vanilla extract now at this point we can get out our whisk and whisk if I all those ingredients together until they’re combined and the egg yolk dissolves into all the other ingredients once that happens we can get out our dry ingredients we’re gonna start with 2 cups of superfine almond flour guys know I really like the Bob’s Red Mill it’s what I highly recommend going with for today’s recipe and we’re gonna be adding 200 grams of that almond flour to our Bowl so once we’ve added all the almond flour the next thing we have to do is sweeten our cookies up and we’re gonna sweep these up without adding carbs or calories by using erythritol we’re actually gonna be using confectioner’s or Thrall today I really like the brand swear of you guys know that if you’ve watched any of my other videos and for today’s cookie recipe we’re gonna be adding a heaping third of a cup or about 75 grams of that stuff to our Bowl we’re also gonna add a half a teaspoon of baking soda and now at this point we’re gonna take out our spatula and start working the ingredients together until a thick sticky cookie dough batter starts to take shape in the bowl once that does start to happen and your ball of cookie dough does take shape in the bowl that’s when you can get out your cookie scoop and you can scoop out 15 to 18 equal size cookie dough balls from the batter and you want to add those to a baking sheet lined with parchment paper once you’ve got all the cookie dough added to the baking sheet you want to take the bottom of the spoon and flatten the tops of each ball of cookie dough and once all the cookie dough is flattened that’s when it’s time to get these in the oven and we’re Beatty’s first somewhere between 12 to 15 minutes just until they start to turn golden brown on top and while the cookies are baking one thing I like to do from time to time is just make a quick icing for the tops of the cookies so what I like to do for that is just add two and a half tablespoons or about 30 grams of the confectioner’s you were throw all to a small dish along with about a tablespoon or 12 grams of unsweetened vanilla almond milk and then I’ll just take a small spatula and mix those two together until that icing starts to form in the dish so once that does start to take shape usually the cookies are done baking at this point so I’ll just let them cool completely in the tray itself on the stove and once the cookies are cooled completely that’s when I’ll get the icing back out add the icing to the tops of each cookie and then I just let the icing set until it’s solidified but like I said this is totally an optional step regardless of if you add it or you don’t this is where your shortbread cookies are gonna end up looking like how delicious do these look so that’s today’s kyoto shortbread cookie recipe I hope you guys enjoy these if you make them I’d love to see your recreation definitely tag me on instagram my handle is in the video description below also down there is the full written out ingredient list as well as the macros and if you want to pick up any of the ingredients that I use today to make the cookies all the links for all the ingredients are down there as well thank you guys so much for watching I hope you enjoy these cookies and I will see you in a next recipe

KETO SHORT BREAD COOKIE INGREDIENTS:
2 Cups (200g) Almond Flour
1/2 Cup (75g) Confectioners Erythritol
1/2 Tsp Baking Soda
1 Large Egg
1/2 Cup (112g) Melted Butter
1 Tsp Vanilla Extract
2 1/2 Tbsps (30g) Confectioners Erythritol
1 Tbsp (10-12g) Unsweetened Vanilla Almond Milk
