Today, we’re going to talk about the ultimate keto food—cauliflower. Cauliflower is low-carb, and it has a ton of nutrients. Cauliflower even tastes like a potato, but it doesn’t have the starch in it.
1 cup of cauliflower has:
• 2.6g carbs
• 1.4g fiber
• 1.2g net carbs
• Vitamins (B1, B2, B3, B5, B6, B9, vitamin C, vitamin E, vitamin K1)
In addition, cauliflower is also high in phytonutrients. Phytonutrients mainly act as specialized antioxidants that help in the turning on and turning off of certain genes, and the maintenance of your DNA.
You might be wondering how to cook cauliflower, or what some great cauliflower recipes are. There are a lot of great recipes with cauliflower out there. My favorite healthy cauliflower recipe is the keto-friendly cauliflower pizza crust.
When you’re looking for a great cauliflower crust to buy premade at the store, always be sure to check the label to make sure that all of the ingredients are actually keto-friendly.
Cauliflower rice makes a great keto rice because it tastes almost identical to rice, but it doesn’t have all of the starch just fiber.
When cooking cauliflower, it’s important to keep in mind that the more you cook the cauliflower, the more nutrients you destroy. Three minutes of steaming cauliflower is equal to 10 minutes of steaming it. Steaming is a better option than boiling, but the best way to preserve the nutrients is to sauté the cauliflower.
